Illustrated recipe for cod "gregada" (in Croatian "bakalar na gregadu"), a thick fish soup and my favourite Dalmatian soul food.
A simple but very nourishing recipe for the soul and body alike. If you don't eat fish, simply skip it, substitute, or add some nori to the soup for that "fishy" flavor.
ingredients:
- 1/2 kg cod fillet
- 1 kg of potatoes
- 100 mL of olive oil
- 300g of (red) onion
- 1/2 head of garlic
- 50 mL white wine
- salt, pepper, bay leaf, parsley
1. Cut the onions, potatoes and garlic(thinly) into slices, and finely chop the parsley.
2. In a large pot put 1/2 olive oil, 1/2 sliced onion and 1/2 sliced garlic. Fry everything briefly with the spices.
3. Remove from fire. Layer 1/2 potato slices, cod, the remaining garlic and onion, and top it of with the other 1/2 of potatoes.
4. Cook on low heat half-covered and shake now-and-then, but don't mix/stir. When the potatoes are soft, add wine and parsley and cook another 5 minutes.
5. Serve hot in a deep plate. Enjoy, and don't burn your tongue!
